Chateaubriand or Fillet Head makes a wonderful, luxurious mini roast with all the tenderness of the fillet. Delicious served pink.

Originally a recipe created for Francois Vicomte de Chateaubriand (1768-1848), the French author and statesman who served Napoleon as ambassador to Britain. It is now normally used to describe a cut from the larger end of the tenderloin.
